I am a legitimate oatmeal cookie monster... I just counted, and as of January 2018, I have shared 47 oatmeal cookie recipes with you. Eep! Have you ever tried any of them yet? (? You can locate all of my oatmeal cookie recipes right there!) They are some of the most popular recipes on my site cause they taste very sweet and comfy, exactly like traditional"indulgent" oatmeal cookie recipes, but they contain no refined sugar or bread!
That means you are going to start with whole wheat flour (or gluten free, if you like ) and immediate oats (like those... or these for a gluten-free edition!) . Instant oats are thinner and smaller than traditional rolled oats, and you are able to see them in canisters right alongside those classic oats in the grocery shop.
I probably seem like a broken record by now... But cause I ? you and want your cookies to flip out perfectly plump and soft, I am reminding link you ... Measure your flour and oats properly, using this method or even a kitchen scale! (? That is the one I have and love. It just cost $20!) A lot of either side is likely to make your biscuits taste cakey or sterile, rather than chewy. This is especially true of this oats--that they act like little sponges and soak up plenty of moisture from your cookie dough!

Watch those bananas? And all those brown stains? When it comes to baking with bananas, brown = beautiful! I ? extra speckly bananas because they have so much bright, bold flavor--and also additional sweetness! That's the minimum number of brown that I recommend. More is even better!
The remainder of the cookie dough's sweetness comes in another natural ingredient... Pure maple syrup (like this!) . You would like the kind that comes directly from pine trees, which is usually offered in skinny glass bottles or squat, round plastic jugs. Forget the pancake sugar and sugar!

The raisins add much more natural sweetness! The recently purchased, extra plump, perfectly soft ones are ideal... But if you have elderly, slightly dried out carbohydrates (hmm... it sounds silly to describe dried fruit as dried out! ) , that's okay!
Simply add them into some microwave-safe bowland put water on top until they're completely covered. Seal plastic wrap across the surface, and microwave the bowl on high for 1 second. If you let the raisins sit mixing together the cookie dough, this little hint hydrates them they're exceptionally juicy--and that makes a significant difference in these cookies once they're baked!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 cookies
The familiar cozy spices and plump raisins make them much more irresistible. They'll keep for at least one week if stored in an airtight container in the refrigerator--should they last that long!
1 cup (100g) instant oats (fermented if essential and measured like this)
3/4 cup (90g) whole wheat or fermented * flour (quantified like this)
1 1/2 tsp baking powder
1/4 tsp salt
2 tablespoons (28g) unsalted butter or coconut oil, melted and cooled slightly
1 tsp vanilla extract
In a medium bowl, whisk together the yogurt, pasta, baking powder, cinnamon, and salt. In another bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Add the flour mixture, stirring just until incorporated.
With a spoon and spatula, dip the cookie dough into 15 rounded scoops on the prepared sheet, and flatten to the desired depth and width using The BEST Vegan Chocolate Chip Cookies - Daily Rebecca a spatula. Bake in 325°F for 10-12 minutes.
Notes: It's extremely important to measure both the wheat and oats properly utilizing this technique or a kitchen scale. (? That is the one I own and adore!) Too much of either could dry out of the biscuits and leave them cakey instead of chewy.
Immediate oats are also referred to as quick-cooking or minute oats. They come in massive canisters, exactly like conservative oats. They are not the ones in the small flavored packets of oatmeal. To create your own, include the same number of traditional yogurt into your food processor, and pulse 10-12 times or until the oats will be approximately 1/4 to ? of their original size.
